Fun Weekend

We Had a fabulous Thanksgiving weekend! 
 
We headed on a road trip to Albuquerque, New Mexico to get My, or should I say Aimee's, Mini Copper serviced. While we were there we hit the mall for a little shopping and went to a fabulous restaurant called the Elephant Bar. It was so flipping good! Let's just say that it's my new favorite place to eat!


We got back Saturday night and started getting down all the Christmas decorations and then Ray, Jon, Aimee and I (and supervisor Isaiah) worked most of the day putting them up. 

Then...tonight I made my world famous chicken and dumplings(lol)and we finished off the evening watching National Lampoons Christmas Vacation which is one of my all time favorite movies!!! I wish all weekends were this fun!

Now back to work tomorrow!!!

Happy Thanksgiving!

I am very thankful that I was able to spend Thanksgiving with both of  my Guat Tots last year. We had our Embassy appointment for Isaiah two days before Thanksgiving so we decided to stay through the week.

We were lucky enough to get invited by my friend Terri to have Thanksgiving dinner with her and her daughter and other families that were in process of adopting

Time for baking!

Okay, here's a first for me. I'm going to post/blog about a recipe that turned out FABULOUS this weekend! I did change it up just a bit. I was in the mood for caramel pecan rolls instead of the powder sugar topping. If your into baking, try these. You'll love them! Here's the recipe first...then below is the pictures!



Best Ever Cinnamon Buns

Ready In: 2 Hours 15 Minutes
Yields: 24 servings
"Yellow cake mix is the secret to the success of these yeasted cinnamon buns. They make a rich, sweet breakfast treat."
INGREDIENTS:
2 (.25 ounce) packages active
dry yeast
2 1/2 cups warm water (110
degrees F)
1 (18.25 ounce) package
yellow cake mix
6 cups all-purpose flour,
divided
3 eggs
1/3 cup vegetable oil
1 1/2 teaspoons salt
1/2 cup butter, softened
4 tablespoons white sugar
2 tablespoons ground
cinnamon
1/4 cup butter, melted
3 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
2/3 cup milk
DIRECTIONS:
1.In a large bowl, dissolve yeast in warm water, and let stand for 3 minutes. Add cake mix, 1 cup flour, eggs, oil, and salt; beat well. Stir in remaining flour until a soft dough forms.
2.Knead on well floured surface for about 5 minutes. Place in a greased bowl, and turn to coat the dough surface. Let rise until doubled in bulk, about 45 minutes.
3.Preheat oven to 350 degrees F (175 degrees C).
4.Punch down, and divide into two equal parts. Roll out each section on a lightly floured surface. Spread each with softened butter and sprinkle with sugar and cinnamon.
5.Roll up like jelly rolls and cut buns 1 1/2 inches thick with a piece of dental floss or a dull knife. Place in greased baking pans, and allow to rise until doubled.
6.Bake at 350 degrees F (175 degrees C) for 25 to 35 minutes or until golden brown.
7.Meanwhile, combine confectioners sugar, 1/4 cup melted butter, vanilla, and milk. Remove baked buns from oven and drizzle with frosting.

Sicky Boy!

Besides re-arranging all the dining room chairs in our house this weekend...Isaiah has been a sick boy. For the last few weeks he has been battling a cold and he finally lost the fight. 
Never in all my years of parenting have I had to stay up almost the entire night with one of my kids. 
Isaiah fell asleep Saturday night around 10:00 and woke right back up around 10:30 to stay awake until 2:30am! All he wanted was for me to walk him around the house. He would start screaming and crying if I was to dare sit down or, God forbid, lay down. He has NEVER acted like this before. Finally around 1:30 I was able to get him to relax and we turned on Pirates of the Caribbean. Then all of a sudden (probably when the tylenol took effect) , he walked straight into my bedroom, crawled up on my bed and went to sleep on his own. This lasted until 4:15am and then he was screaming again for awhile. 
Luckily our pediatrician is open a few hours on the weekends and Isaiah was able to see the doctor. He once again has an ear infection and he is very congested. Hopefully we have a better night tonight!

Kick out #1

Can you believe I'm excited about getting a kickout? Well, I am! Let's get it over with and get out of there completely!

I was just telling my friend Lisa today that I was going to call PGN tomorrow and that I was hoping for this kick out. God heard me loud and clear!

The funny thing is... they didn't even notice that the pre-approval wasn't included in our file. Our kick out was for the translation that was done on my police report. I think she said they put my hubby's name on it instead of mine. The other one was for our homestudy. 

There is good and bad news about our homestudy, Good news is...I already had sent a copy of our updated homestudy that we had done when we adopted Isaiah. This should work for this kick out. The bad news is...If we are not "out" of PGN by January (I don't think we will), we are going to have to get our homestudy updated for a third time. Our 171H will expire the beginning of April and they will require an updated homestudy to get an extension. This time or update is basically getting a brand new homestudy done since we already brought Isaiah home. And yes, it's almost as expensive! 

Since this adoption of Abbie is costing me a fortune and sending me to the poor house...what's a couple more thousand dollars, right?! Yeah right!!!

Last night I received some pictures of my sweet Abbie Girl from one of my friends that's in Guatemala visiting her boys. I thought her e-mail about her seeing Abbie was so sweet that I decided to copy and paste it here. As I was reading her e-mail... I was picturing Abbie in my mind.

At the hogar, I was only able to go in the dining area with the bigger kids. . . I didn't think I was going to get any pictures of any other children.  Then sweet Abbie strayed right into the room that I was in -- I was so excited!!  The nannies thought I was quite silly to be so excited to see her :) :) :)
